I love a potato – especially a fried potato, and especially at breakfast.
This potato rösti is crispy and delicious – smeared with a garlic & herb cream cheese, topped with smoked salmon and dill, and a squeeze of lemon.
Highly recommend adding a side of avocado and poached eggs or fried eggs on top of this bad boy. But you do you.
Ingredients
2 maris piper potatoes
Rapeseed oil
Garlic & herb cream cheese
Smoked Salmon
Dill, chopped
Lemon
Method
Peel and grate your potatoes (with cheese grater), then soak up as much moisture as you can with a few paper towels.
Heat up a pan on low-medium heat with a splash of oil, spread and press your potatoes into a hash cake and top with salt and pepper. Fry for 10 minutes, then flip over and fry for another 10 minutes.
Top it with the garlic and herb cream cheese, then layer your smoked salmon on top.
Sprinkle dill over it to serve, and a squeeze of lemon (serve it with lemon wedges on the side if you’re making it for people to squeeze themselves!).
